Fruit and Nut Bars

In need of a healthy go-to snack that both kids and adults will enjoy? Check out these tasty fruit and nut bars. Mix and match the dried fruit with what you have in your pantry. These store great in the fridge or the freezer.
Makes about 10 large bars or 30 bite-sized bars

Ingredients
 
 

  • 1 ½ cups raw almonds
  • 1 cup dates, pitted
  • 1 cup freeze dried blueberries or other unsweetened dried fruit (such as dried cherries)
  • ½ cup prunes

Instructions
 

  • In a food processor, blend the almonds until fine like flour. Adjust the almond flour so it does not stick under the blade, make it loose.
  • Process the almond flour and the rest of the ingredients until mixed together well. It may be helpful to do this in small batches.
  • Line a pan with parchment paper or use a glass baking dish, and add the mixture to the pan. Spread-out the mixture using the back of a spoon or clean hands, try to make it as even as possible. Place into the fridge to allow it to set. Once ready, slice the bars into desired sizes (10 large bars or about 30 bit-seized bars). Store remaining bars in the refrigerator or freezer.
