Jicama Mango Salad

Featuring jicama, mango, jalapeño, and citrus fruits for a sweet, spicy, and zesty flare. This refreshing salad can be enjoyed year round.

Ingredients
  

  • 1 garlic clove, minced
  • ¼ cup fresh lemon juice
  • ½ cup chopped cilantro
  • 2 cups peeled and julienned jicama
  • 3 cups peeled and sliced mango
  • 1 jalapeno, seeded and diced
  • 1 cup minced red onion
  • Zest of 1 orange
  • Orange pieces, to taste
  • Lemon zest, to taste
  • Lemon pepper, to taste (optional)
  • Black pepper, to taste
  • Sliced radishes (optional garnish)

Instructions
 

  • Mix the garlic, lemon juice, and cilantro. Season with lemon pepper and black pepper to taste.
  • Add the remaining ingredients, toss lightly, and serve. Garnish with sliced radishes, if desired.
