Peach and Papaya Salad

This Peach and Papaya Salad uses fresh ripe fruits and is a flavorful way to pack your summer meals full of goodness.  
The juice from the ripe fruits and tomatoes add their own flavorful dressing to the salad, but toss on your favorite vinegar if the mood strikes. Consuming vinegar with a meal reduces the spikes in blood sugar, insulin, and triglycerides, and appears to work particularly well for those who are insulin-resistant.

Ingredients
 
 

  • 1 head lettuce, chopped
  • 1 small papaya, cubed
  • 2 mangos, cubed
  • 2 cups halved tricolor cherry tomatoes
  • 1 medium peach, sliced
  • ¼ cup chopped red onion

Instructions
 

  • Wash and prep all of the ingredients. Add the chopped lettuce to a large bowl. Top with the papaya, mangos, tomatoes, and peaches. Sprinkle the chopped onions on top. Toss lightly, serve, and enjoy.
