Peach and Papaya Salad
This Peach and Papaya Salad uses fresh ripe fruits and is a flavorful way to pack your summer meals full of goodness. The juice from the ripe fruits and tomatoes add their own flavorful dressing to the salad, but toss on your favorite vinegar if the mood strikes. Consuming vinegar with a meal reduces the spikes in blood sugar, insulin, and triglycerides, and appears to work particularly well for those who are insulin-resistant.
